In his 20-year career as a sommelier, Nicolas has driven the wine programs in numerous Michelin-starred restaurants and five-stars hotels in Paris (La Tour d’Argent, Le Meurice, Plaza Athenée) and in Hong Kong since 2009 (Intercontinental, Grand Hyatt, On Dining).
Nicolas returned to France in 2017 where he lived and worked for two years as a winemaker in Puligny-Montrachet, Burgundy. This experience brought him to Champagne where he started his own venture (Champagne Nicolas Deneux).
In 2019, an opportunity brought him back to Hong Kong: build and manage all wine concepts for the Rosewood Hotels in Asia. In the meantime, he also made wine for a few years in Ningxia, China.
Nicolas has switched from the restaurants and hotels’ operations to representing and giving access to the Hong Kong market of some of the finest wines, and focuses on sharing his different experiences with both novice and seasoned wine lovers.
