With over 20 years of sommelier experience, Nico is a true authority in the world of fine wine. His career has taken him from the dining rooms of Michelin-starred institutions in Paris (La Tour d’Argent, Le Meurice, Plaza Athenée) to leading wine programs for Hong Kong’s most iconic venues including Intercontinental, Grand Hyatt, and On Dining.
In 2017, Nico stepped away from the floor to get his hands in the soil - working as a winemaker in Puligny-Montrachet, Burgundy, followed by founding his own label in Champagne: Champagne Nicolas Deneux. His journey continued in China, where he produced wine in Ningxia, and later returned to Hong Kong in 2019 to lead wine concept development for Rosewood Hotels across Asia.
